Tips to reduce the bitterness of bitter melon for crisp, delicious, and easy-to-enjoy dishes
Plunging bitter melon into ice water will help reduce its bitterness.
Bitter melon is a food rich in vitamin C and minerals, chosen by many for its ability to clear heat, regulate blood sugar, and improve the digestive system. However, the fruit's characteristic bitter taste makes quite a few people reluctant to consume it. With just a few proper preparation and cooking techniques, you can significantly reduce its bitterness while still preserving its nutritional value.
Remove the white pith
This is the most crucial step when prepping bitter melon. After halving the fruit lengthwise, use a spoon to scrape out the pith and white inner membrane thoroughly. This part contains many bitter compounds, so removing it carefully will make the dish much more enjoyable.
Salt to reduce bitterness
After thinly slicing the bitter melon, sprinkle a moderate amount of salt on it, gently massage for about 5 minutes, and let it sit for 15–30 minutes. Then, squeeze lightly and rinse thoroughly with cool water. This method helps remove some of the bitter juice while keeping the ingredient crunchy.
Soaking in diluted sugar water
Another method is to soak the bitter melon in diluted sugar water for about 10–15 minutes. This helps soften its bitterness, retain its natural green color, and enhance its crispness.
Blanch briefly in boiling wateri
Blanch the bitter melon in lightly salted boiling water for about 1–2 minutes, then immediately remove and plunge it into ice water. The sudden temperature drop helps reduce bitterness while preserving its color and vitamin C content.
Combine ingredients to balance flavors
In addition to preparation, the choice of cooking ingredients also helps reduce bitterness. Bitter melon can be combined with onions, garlic, ginger, chilies, or sweet-and-sour seasonings such as lime juice, tomatoes, and sugar to create a more balanced flavor.
When stir-frying, bitter melon can be paired with eggs, minced meat, or oyster sauce to add richness and bring out a savory, satisfying flavor.
For a tastier stir-fry, spread the bitter melon evenly across the pan and avoid stirring constantly. Wait until about halfway through the cooking time before turning it over to help it stay crisp, prevent it from breaking apart, and limit the release of additional bitterness.
