Nutrients and Bioactive Compounds of Paddy Straw Mushroom

Key Nutritional Components

Paddy straw mushrooms are highly prized for their nutritional value, providing significant amounts of protein, carbohydrates, vitamins, minerals, and dietary fiber. They contain 14–27% crude protein, including many essential amino acids such as arginine, aspartic acid, leucine, lysine, and valine. This high amino acid content makes straw mushrooms an ideal protein supplement, especially for vegetarians. Carbohydrate content ranges from 40–50%, increasing as the mushroom matures. Crude fiber accounts for about 11.90%, significantly higher than many other edible mushrooms. Straw mushrooms have a low fat content, around 4.481% of dry weight, but are rich in unsaturated fatty acids, particularly linoleic acid (69.91%). They provide fat-soluble vitamins (A, D, E, K) as well as B-complex vitamins and vitamin C. Most notably, they are rich in ergosterol, a precursor to vitamin D. Straw mushrooms also supply many essential minerals, including potassium, phosphorus, sodium, magnesium, iron, zinc, and copper.

Key Compounds and Applications

In addition to their nutritional value, paddy straw mushrooms possess valuable medicinal properties. Compounds such as β-glucan, zymosan, selenium, flammutoxin, and volvatoxin exhibit antioxidant activity and the ability to inhibit the growth of cancer cells. Interleukin-1β, Interleukin-8, and Tumor Necrosis Factor-α contribute to anti-inflammatory and antitumor effects. Compounds such as 2-pyrrolidinone also demonstrate antibacterial and antifungal properties.

Straw mushrooms have also been used in traditional Chinese medicine to treat heatstroke, reduce fever, support liver and stomach health, lower cholesterol, and help prevent atherosclerosis.

Comparison with Oyster and Button Mushrooms

Compared to oyster mushrooms (Pleurotus ostreatus) and button mushrooms (Agaricus bisporus), paddy straw mushrooms have distinct advantages. They stand out for their strong antioxidant and antitumor activities, rich dietary fiber content, ergothioneine, and lovastatin—which help lower cholesterol and regulate the immune system—while offering balanced nutrition and being especially rich in vitamin D, though their levels of certain other bioactive compounds may be lower.

Overall, the paddy straw mushroom is a valuable food choice with high nutritional and medicinal worth. Further research and incorporation of straw mushrooms into daily diets and medicine can yield substantial health benefits.
